I have been so delinquent in blogging lately. No time. But that's a lame excuse--it's the one everybody uses! At least I could try to be original!
People growl at me when I suggest they eat a healthy diet, but they positively radiate enthusiasm when I send a good recipe. So, thanks to my daughter Jen introducing me to these mouth-watering asparagus spears, I'm sending two! These make a great meal combination that you will just love! ...but I won't tell you how good they are for you.)
Bacon-Wrapped Asparagus Spears
3-4 asparagus spears wrapped in a (Applegate: no hormones, antibiotics, or nitrates) bacon strip. Bake on foil at 400 degrees for 20 min. Do not pre-heat oven or leave in when done. (Make a lot of these. They will be gone in an instant!)
Tomato Cashew Soup (serves 4)
Blend in blender until smooth:
1 cup raw cashews
2 cups water
Add:
1 tsp olive oil
1 cup chopped onion (saute if needed)
1/4 cup chopped celery
½ tsp salt
1 clove pressed garlic
2 tsp dried basil
½ tsp chili powder
1/4 tsp ground fennel (anise) (or 1 chopped leaf and stem or ½ tsp fennel seeds)
1/2 tsp ground cumin
1/2 tsp ground turmeric
dash of clove powder
15 oz. chopped tomatoes
1 handful of fresh or 1 T. dried parsley
Mix all ingredients in blender.
Heat only to around 108 degrees to retain nutrients.

I think bacon is definitely a health food, because it makes vegetables taste wonderful. It's like magic!
Thanks for the recipes. This natural eating is a path I'm trying to move in but it's slow going, especially because I need new recipes! So you should blog more because I, for one, find it all very interesting and helpful.
