 MIRACLE
           MAYO    

Are you looking for an all-purpose dressing that doesn't have added chemical preservatives, high-fructose corn syrup, sugars and artificial colors?  This sauce works wonders as a great substitute base for salad dressings, fish and veggie sauces, mayonnaise and even (the not so miraculous) Miracle Whip.

Almond Mayonnaise

Cover in water and gently boil 1 cup raw almonds 3-5 minutes.  Drain and allow to cool slightly.  Slip off the skins and have all other ingredients ready.  Place almonds in blender (or food processor) and grind to a fine powder.

Add:
3/4 cup water
1 clove garlic
(opt. 1 tsp. chopped onion)
1 1/2 tsp. sea salt
sprinkle of stevia (KAL powdered extract)

Blend well, then add:
1/2 cup more water to form a smooth cream
3 tbls. lemon juice  (juice of 1 lemon works)
3 tbls. raw, organic apple cider vinegar
1/4 tsp paprika

With blender on low drizzle in and blend for 1 minute:
1 cup organic, unrefined oil (flax, grapeseed, olive or pumpkin seed or mix them)

Scrape into a lidded container and refrigerate.  This will keep 10 days to 2 weeks.
Can add herbs or other seasonings. 
Add more water for thinner consistency.

Makes 1 1/2 to 2 cups.
