Creamy Strawberry Pie Filling

1/2 cup pitted dates (or 1/8 tsp powdered stevia extract)
2 tbls water
1 1/2 cups cashews (soaked for 6+ hours or overnight)
3 cups fresh or frozen chopped strawberries
Mix:
1/4 tsp salt
1 tbls raw apple cider vinegar
1 tbls vanilla extract
Blend cashews in a food processor until chopped well.
Add dates and water and blend for about 3 minutes, scraping sides as needed, until creamy.
Add all other ingredients and blend for about 5 minutes more.
Place on a nut crust and spread evenly with a spatula. See nut crust recipe.
Put in freezer for 2-3 hours to firm up. Take out 2-3 hours before serving.
Eat when chilled and still firm.
Top with sliced strawberries.
